Sweet and Sour Pork
1 pound pork tenderloin
1/4 cup corn starch
3 tablespoons oil
4 ounces pineapple cubes
1 small onion, sliced
1 green pepper, sliced
1/4 cup water
3 tablespoons apple cider vinegar
3 tablespoons packed brown sugar
Cut the pork tenderloin into small cubes. Lightly dust the cubed pork in cornstarch. Heat the oil in a heavy skillet. Add the coated pork and fry until browned on both sides. Add the remaining ingredients and cook until the vegetables are crisp tender. Serve immediately over steamed rice.
